Chocolate Cakey Muffins

This is a great snack for traveling or a perfect addition to your lunch. This recipe is quick and easy with not many ingredients or steps. Enjoy these as a special treat, or when you are sharing with others. These- my friend, will hit the spot when you want something fluffy and sweet, like cake… healthy cake, haha!




2 cans of black beans

1 cup of almond butter (or your favorite nut butter)

1/2 cup of maple syrup or 10 dates

2 tablespoons of vanilla

1/4 of a teaspoon of salt

1/2 of a teaspoon of baking powder

1/2 of a teaspoon of baking soda

Half of an orange, (no peel)

2 tablespoons of ground flaxseed

3 drops of lemon essential oil (optional)

1 tablespoon of apple cider vinegar (ACV)

2 tablespoons of cacao powder

1 leaf of Swiss chard (stemmed) or 1 cup of spinach #YourWelcome ☺




Preheat your oven to 325 degrees. Combine all ingredients in a food processor until evenly mixed, (I pulse the beans in the food processor before adding in other ingredients). Once the ingredients are mixed evenly, you can separate the muffin batter into the muffin tins. I recommend using the smaller size muffin pans with parchment paper muffin liners so you do not have to worry about them sticking. Bake for 20-25 (ish) minutes, using the small size muffin tins. If you are using larger muffin tins, you may have to bake for longer and at a higher heat.
