Oil Free Granola

A delicious breakfast, snack or dessert; perfect anytime, any day!! We love to top our Acai bowls with this simple granola along with a banana, or eat as cereal ☺. We batch cook this recipe because it’s so simple and it is always good to have on hand!

 

Ingredients:

 

6 cups of rolled old fashion oats

1 cup of coconut flakes

1 cup of sunflower seeds

1 cup of pumpkin seeds

1 cup of chopped nuts (I love walnuts or almonds for this)

1 cup of date syrup or 1/2 cup of maple syrup (see note for date syrup)

1/4 cup of hemp seeds

1/4 ground flaxseeds

1 tablespoons of cinnamon

2 tablespoons of vanilla

1/4 teaspoon of salt

1 cup of dried fruit; cranberry or blueberry, (add in after the granola has been baked)

1/4 cup of goji berries in addition to the 1 cup of dried fruit of your choice

 

Instructions:

 

Preheat oven to 350 degrees

Combine all ingredients except the dried fruit and goji berries and bake for 45 minutes, stirring after 15 minutes and 30 minutes

Let cool and add in dried berries! We top our Acai bowls or Cashewgurt with this mix, you can also pour your favorite plant-based milk on top and enjoy as cereal

 

Ness’s special hint: Boil pitted dates and water together for 5 minutes and then turn down the heat to low and let simmer for 30 minutes, then turn the stove  off. Once cooled, blend for 2-3 minutes in a high-powered blender. Use enough water to cover the dates.

 

Store in mason jar in your pantry for up to a week or in the refrigerator for a month!
