This is a great snack for traveling or a perfect addition to your child’s lunch. This one is so good that it will even have the plant-based haters in your life coming back for more!
-3 cups of dry, raw oats (old fashion or one minute, not steal cut)
-2 cups of coconut flakes
-1 ½ cups of nut butter (I prefer peanut but almond is another fav)
-1 ½ cups of ground flax seed
-1 cup of chocolate chips
-¾ cups of honey or syrup (play with this step, start smaller than¾’s and work your way up, you can get away with less sugar)
-3 tbsp. of chia seeds
-3 tbsp. of pure vanilla extract
-2 tbsp. of cacao powder
Instructions: Combine all of the ingredients and mix really well. Once all ingredients are mixed evenly, form into balls (energy balls) about the size of strawberry
Ness’s special hint 1: you can do less or more sugar (honey or syrup) as wanted or needed. If they are not sticking together very well, add in more.
Ness’s special hint 2: your life will be easier if you rinse your hands under water after forming 3-4 balls. Leave hands a little damp when forming, after rinsing.
